Courgettes ahoy
There's no stopping them. Once the sun got into it's stride, the courgettes just can't stop growing. Needless to say with an average of 12* new, 30cm long courgettes every 4 days, there has been a need for creativity in the kitchen.
Last week our dinner menu went a little something like this:
Sunday: Boiled courgettes with olive oil
Monday: Baked courgettes stuffed with minced meat
Tuesday: Spaghetti with garlic and courgettes
Wednesday: Courgette omlettes
